Butternut Squash: One of the most popular squash varieties, butternut squash is bottleneck shaped and has beige colored skin. The flesh is fine textured and golden orange in color. It has a flavor similar to that of a sweet potato with a more pronounced nutty flavor. It is used in making rich soups and stews. It is also baked in the oven with a bit of salt and brown sugar and served as an appetizer. Cooking butternut squash is very easy and you can prepare it in a microwave too.

Delicata Squash: Delicata squash is also called sweet potato squash, bohemian squash or peanut squash. It is a winter squash that is shaped like a peanut and has a rich and sweet flavor. It has a very thin and fine textured skin which is also edible when baked or steamed. It is light orange in color and its size ranges anywhere from 6 to 10 inches. Delicata squashes can be made into thick soups.

Pattypan Squash: Pattypan squash that are shaped like flying saucers comes in three colors, white, green and yellow. They are smaller in size than most squashes and have a thin skin with a fleshy interior. They are usually steamed or baked and used in many stews and curries.

Spaghetti Squash: This squash is shaped similar to a watermelon and has off-white to pale yellow skin. The unique characteristic of spaghetti squash is that it is very fibrous and hence separates into strands when cooked. Because of these strands, that resemble pasta strands, it is known as spaghetti squash. It has a very subtle nutty flavor and it is mostly used for making casseroles and pies.

Hubbard Squash: Hubbard squash are irregular shaped squashes that have a very tough and uneven outer skin. The flesh is pale yellow to orange in color and it is quite fibrous. The skin of this squash is inedible and the flesh is generally roasted or steamed. They are used for making casseroles and also soups.

Amber Cup Squash: It is a small bright orange squash variety. Some amber cup squashes comes with green stripes too. The flesh of this squash is a bit dry and fibrous and so is used for cooking casseroles and stews. It can also be roasted and then used for cooking savory dishes.
