Homemade Pumpkin Pie from Scratch

This pumpkin pie recipe is the traditional way of making the delicious Thanksgiving dessert by adding evaporated milk. Learn how to bake a pumpkin pie and enjoy!

Ingredients

  • 16 ounces of pumpkin pulp from canned pumpkin puree
  • 4 ounces dark brown sugar
  • 2 eggs
  • ½ teaspoon lemon zest
  • ¼ teaspoon ground nutmeg
  • ⅓ cup white sugar
  • 1 good crust
  • 12 ounces evaporated milk
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground cardamom
  • ½ teaspoon salt

  • 1 egg yolk
  • ¼ teaspoon ground cloves

Preparation

  1. In a large mixing bowl, take the dry ingredients including brown sugar, white sugar, nutmeg, cardamom, ginger, cloves, cinnamon, nutmeg and salt. Add the lemon zest, stir and set aside.
  2. Break the two eggs in a medium-sized bowl and add the egg yolk too. Beat them well and combine with the dry ingredients. Add the pumpkin puree to this mixture, followed by the evaporated milk. Continue stirring after each addition and mix well till all the ingredients are fully blended.
  3. Transfer the batter into a pie crust and place it in a 425 degrees F preheated oven and bake for fifteen minutes. Once this is done, reduce the temperature of the oven to 350 degrees F and bake again for 40-50 minutes.
  4. Before taking out, insert a toothpick to check whether it is fully done. Place the pumpkin pie on a wire rack and let it cool for 2 hours.

Though, usually pumpkin pie is made with evaporated milk, substituting it with whipped cream is also a good option. If you want to make pumpkin pie crust on your own, here is a pumpkin pie crust recipe with butter.

Ingredients

  • 16 ounces solid homemade stewed pumpkin, pureed
  • 3/4 cup whipping cream
  • 3/4 cup white sugar
  • 3 teaspoons cornstarch
  • 3/4 teaspoon ground ginger
  • 3 large eggs, beaten
  • 1 teaspoon ground cinnamon
  • 1 teaspoon brown sugar
  • 1 teaspoon pumpkin pie spice
  • 4 ounces sour cream
  • ¼ teaspoon Kosher salt
  • 3 teaspoons apricot preserves

For Crust

  • 4 ounces powdered sugar
  • 3 tablespoons whipping cream
  • 1 cup of ice water
  • 1 stick of cold butter, cut into small pieces
  • 1¼ cups wheat or All-purpose flour
  • dash of kosher salt

Preparation

  1. To make crust, blend wheat flour, kosher salt and powdered sugar in a blender. Then add butter into the blender and mix till small lumps are formed. The next step will be to add the cream and mix again till it looks lime a biscuit dough. Transfer crust dough into a plate, make a ball of it and then flatten it in the shape of a plate. Place the dough in a plastic bag and refrigerate for 30 minutes.
  2. Take out from the refrigerator and line the dough with foil and make small holes over the crust with a fork. Bake the crust for ten to fifteen minutes. Take out of the oven, remove the foil and bake again for 10 minutes till the crust becomes golden brown in color. Set aside and let it cool.
  3. To make the pie filling, take brown sugar, ground ginger, white sugar, cornstarch, cinnamon and pumpkin pie spice in a large bowl. Stir well and fold in the stewed and pureed pumpkin, beaten eggs, sour cream and whipping cream to it. Mix till all the ingredients are fully blended.
  4. Take the crust and sprinkle apricot preserves on them and pour the pie filling. Bake the pumpkin pie for 55-60 minutes at the temperature of 325 degrees F. Once the pumpkin pie us fully baked, keep it on a wire rack to cool. Cover the cooled pumpkin pie with tinfoil and keep it in the refrigerator for a day.

Apart from the pumpkin pie version made with evaporated milk, another tradition pumpkin pie recipe is made with condensed milk. While the former pumpkin pie is a little spicier, the latter is sweet in taste.

Ingredients

  • 16 ounces fresh pumpkin puree
  • 1½ teaspoon ground cinnamon
  • 14 ounces sweetened condensed milk
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • 2 large eggs, beaten
  • 1 unbaked pie crust

Preparation

  1. Take pumpkin puree, condensed milk, sugar, beaten egg, ground ginger, cinnamon and salt in a large bowl and stir till all they are mixed well. To save time, you can also blend them in a mixer.
  2. To bake the crust, line it with a foil and bake in the oven at the temperature of 425 degrees F for fifteen minutes.
  3. Once this is done, remove the foil and transfer the filling ingredients into the crust. Reduce the oven temperature to 350 degrees F and bake for 40 minutes or till the pie is fully baked.
  4. Let the pumpkin pie cool on a wire rack and when it is completely cooled, serve it with whipped cream.
